Spiritual Goal - Set a day a part just for some family fun..
Provident Living Goal-Learn to preserve food in a way you haven't tried before.(per
person) Storage Goal-100 quarts fruit and or vegetables - 24 pints jam or jelly -
Feminine needs - School supplies - Pet supplies
72 hour kit - 1 can tuna -1 can pork and beans - 1/2 pound dried milk - 2 packets hot

chocolate mix (or 1 large can per family) - 2 instant soup packets (these should be
rotated every year) - Disposable plates, cups, bowls and flatware - pet supplies (be

sure to include dishes, leash and extra water)

Making Do
Out of ----------Use
Butter - One cup: 1 cup shortening and 1/2 tsp. salt; OR 2/3 cup vegetable oil
Shortening has a longer shelf life than oil
Buttermilk - One cup: Add enough milk to 1 Tablespoon vinegar OR lemon juice to equal

1 cup; let stand 5-6 minutes before using OR 1 cup whole milk and 1-3/4 teaspoons
cream of tartar
Unsweetened chocolate - One square: 1 Tbs. butter/shortening/cooking oil and 3 Tbs..
cocoa powder
Corn syrup - 1 cup sugar and 1/4 cup liquid (water or fruit juice)
Cornstarch - 1 1/2 tsp. - 1 Tbs. Flour; For 1 Tbs. for thickening - 2 Tbs. flour
Whole egg – 1 – 1 1/2 to 2 Tbs. canned pumpkin OR 2 Tbs. mayo
2 Eggs - 1 package unflavored gelatin dissolved in 1 cup warm water..
Flavored gelatin - Equal to a 3 oz package - 1 Tbs. and 2 cups fruit juice By the
way, use the juices from canned fruits for cooking
Honey - 1 cup – 1 1/4 cup sugar and 1/4 cup liquid (water or fruit juice)
Mayonnaise - 3/4 cup: - 4 tsp. flour, 1/2 tsp. sugar, ¼ tsp. salt, 1/2 tsp. mustard,
3 Tbs. Evaporated milk 1/2 cup oil, 2-4 Tsp. sugar
Whole milk - Equal parts evaporated milk and water OR 1 cup water & 1/3 cup nonfat
dry milk To make dry milk taste better, add 2 Tbs. butter to 1 cup milk OR 1/8 tsp..

vanilla to 1 gallon
Oil - use 1 to 1 ratio applesauce for oil
Sour cream - 1 cup - add 1 1/2 Tbs. vinegar to 1 cup of milk; TO MAKE 2 1/2 Tabs: -
1/2 cup nondairy creamer, 1 tsp. oil, 5 tsp. vinegar, and 2 tsp. water
Sugar - Replace using 1 to 1 ratio molasses for sugar OR use 3/4 cup honey but reduce

liquid by 1/4 cup or add 1/4 cup flour
White flour - 1 cup - Replace using equal amount of corn flour or corn meal for white

flour OR use 3/4 cup wheat flour OR 1-1/2 cup rolled oats
Baking powder – 1 tsp. (use immediately!) mix 1/4 tsp. soda and 1/2 tsp. cream of
tartar
Sweetened condensed milk- mix 1/2 cup warm water with 1 cup and 2 Tbs. nonfat dry
milk
and 3/4 cup sugar..
Chocolate syrup -1/2 cup corn syrup and 3/4 cup cocoa, bring to a boil and add 3/4
cup
sugar and bring back to almost a boil. Cool..

Zucchini-Pineapple
1 gallon shredded zucchini
46 ounce canned pineapple juice
1 1/2 cups lemon juice (bottled)
2-1/2 cups sugar
Pineapple flavoring, optional
   Simmer all ingredients for 20 min. Pack into clean pint jars. Process 20 min. in
hot water bath. Use like crushed pineapple..

Zucchini Relish
10 cups ground, unpeeled      zucchini
4 cups ground onion
5 tbs. salt
2 1/2 cups white vinegar
4 1/2 cups sugar
1 tbs. nutmeg
1 tbs. dry mustard
1 tbs. turmeric
1 tbs. cornstarch
1/2 tsp. pepper
2 tsp. celery salt
1 sweet green or red bell pepper,    chopped fine
     Put first 3 ingredients in a large container, mix well, and let stand
overnight..
Drain, rinse in cold water, drain again, and add all above ingredients to a large
kettle. Bring to a boil; simmer, uncovered, stirring occasionally for 30 min. Pour
into 6 - 8 pint jars and seal..

Zucchini "fruit" bits
10 cups peeled Zucchini cut into
     1'' pieces
3 cups water
2 1/2 cups sugar
2 pkgs. powdered fruit drink mix
    Combine all in pan and boil for 25 mins. Drain and place on sprayed rack or
directly on sprayed cookie sheet. Dry in oven 12 -14 hrs (depending on the size of
the pieces) at 125 degrees. Reuse the liquid for another batch..

Zucchini "Fries"
2 medium zucchini
1 egg
2 teas. milk
1/3 cup seasoned dry bread crumbs
nonstick cooking spray
    Preheat oven to 400 degrees. Spray a large cookie sheet with nonstick spray. Cut
zucchini in half crosswise, and then cut each half lengthwise into 1/2" strips. In
small bowl, combine egg and milk. On sheet of waxed paper, place crumbs. Dip each
zucchini strip in egg mixture, then in crumbs, turning to coat evenly. Place strips
on cookie sheet. Bake about 15 minutes, or until golden-brown, turning after 8
minutes. Serve immediately. Makes 4 servings..

Zucchini squash casserole
        16 Servings
6 med. Zucchini; 1/4 inch slices
1 lb Ground beef
1 can Mushroom soup
1 med. Onion; finely chopped
1 tsp. Salt
1/4 tsp. Pepper
1/2 tsp. Oregano
1/3 lb Cheddar cheese; grated
1 cup Cracker crumbs
     Boil zucchini slices in small amount of water for 6 minutes; drain. While squash

is cooking, brown ground meat; drain off fat. Mix well with remaining ingredients..
Add squash and stir. Pour into greased 2-quart casserole..

Honey Syrup for Canning Fruits
Wisconsin State Fair, Eleanor Loew Blue ribbon winner 1962
5 cup water
2 cup honey
   Mix and boil syrup for a few minutes. Put fruit into syrup and heat through until
done by testing. Fill sterilized jars with boiling hot syrup and fruit, then seal..
HINTS when serving canned - pears, add 1 or 2 drops of almond flavoring when jar is
opened; peaches, add 1 or 2 drops of vanilla. Serve chilled and for the natural
flavor..

Mock V8 Juice
15 lb.ripe tomatoes, chopped
2 cups Celery, chopped
3 large Onions, chopped
3 Cloves garlic minced/mashed
1/4 cup sugar, or to taste
2 tbs. Salt
3/4 tsp. Pepper
2 tsp. Prepared horseradish
1/3 cup Lemon juice Worcestershire to taste
2 tbs.vinegar to each quart before
    processing..
   Over medium high heat bring the vegetables to a boil and boil gently for about 20
minutes. In a covered blender add a portion at a time process until smooth. Strain
and discard pulp. Add seasonings and bring to just under boiling if canning, or chill

and freeze. Yield about 6 quarts..
