                                      Tomatoes!
Tomatoes, tomatoes, tomatoes. Tomatoes in the fruit drawer of the frig. Tomatoes on
the window sill. Tomatoes on the counter. Tomatoes on the table. Help! The tomatoes
are taking over!
   Here are some recipes to use a few of those tomatoes.

Tomato/Cheese Salad
Peel one medium sized tomato per serving and chill thoroughly. Scoop out a small
amount of pulp form the center of each. Fill each cavity with equal parts Roquefort
and Neufchatel cheese worked together and moistened with French Dressing. Place each
tomato on a lettuce leaf and serve with French Dressing.

Ripe Tomato Pickle
3 pts. tomatoes, peeled, and
   chopped
1 cup chopped celery
4 tablespoons chopped red pepper
4 tbs chopped onion
4 tbs. salt
6 tbs sugar
6 tbs mustard seed
1/2 tsp. cinnamon
1 tsp. grated nutmeg
2 cups vinegar
   Mix all in order given. Put in a glass jar and cover. This uncook-ed mixture must
stand a week before using, but may be kept a year.

Chili Sauce
12 medium-sized ripe tomatoes
1 bell pepper, finely chopped
1 onion, finely chopped
2 cups vinegar
3 tbs sugar
1 tbs slat
2 tsp cloves
2 tsp. cinnamon
2 tsp. allspice
2 teaspoons grated nutmeg
    Peel tomatoes and slice. Put in a large kettle with remaining ingred. Heat
gradually to boiling-point; cook slowly 2 1/2 hours.

Chow-Chow
2 qts. small green tomatoes 12 small cucumbers
3 red peppers
1 cauliflower
2 bunches celery
1 pt. small onions
2 qts. string beans
1/4 lb. mustard seed
2 oz. turmeric
1 tbs. allspice
1 tbs. pepper
1 tbs. clove
Salt
1 gallon vinegar
   Prepare vegetables and cut in small pieces, cover with salt, let stand 24 hrs, and
drain. Heat vinegar and spices to boiling point, add vegetables, and cook until soft.
