Basic Bulgur
1 part whole-wheat kernels
2-3 parts water
½ to 1 teaspoon salt
    Measurements are give or take. Cover wheat with water to about 2-inches above
grain, in large, heavy pot. Bring to a boil; remove from heat. Let stand about 2 hrs.
Add water if needed and bring to full boil again. Remove from heat; let stand about
30 mins. more. Stir; salt to taste. Drain
    It’s a good idea to barely crack the bulgur using a blender or food mill.
Cracking results in better texture and flavor.
   May store in tightly covered container in frig about 2 weeks. OR You dry for
long-term storage
To Rehydrate
One serving would equal 1 cup.
(3/4-cup water, ¼ tsp salt, 1/3 cup Bulgur) Rehydrate 15-30 mins in any liquid.
Bulgur Sausage
1 cup cracked basic bulgur, cooked
1 teaspoon sage
¼ teaspoon onion salt
¼ teaspoon garlic salt
Dash hot pepper sauce
1 teaspoon Worcestershire sauce
1 egg
1 teaspoon brown sugar
6 drops liquid smoke
1 teaspoon beef soup base or
    1 bouillon cube
   Combine all; mix well. Form patties; fry in lightly greased pan.

Crunch Snack
2 cups basic bulgur    Seasoning
   Spread bulgur in thin layer on cookie sheet. Bake till very dry and crunchy in
325-degree oven. Add seasoning of choice..

Bulgur Hot Cereal
3 cups basic bulgur
¼ cup raisins
1 cup milk
½ cup sugar
Honey (or other sweetener)
   Bring bulgur and raisins to boil; reduce heat; Stir in milk and sugar; simmer
about 5 minutes. Serve hot with milk and honey to taste.

                      Honey
Spring is coming can Honey be far behind.
   Did you know that honey comes in many colors? Would you believe it can not only be
the amber, and yellow we normally see, but it can be orange, almost clear, almost
black, blue and green. The lighter the color the higher the price, because it usually
has a more delicate flavor.
   When buying honey you want to make sure that it smells clean, and there aren’t any
particles.
    Terms to know:
Whole comb – be sure it came from the hive without some sort of processing having
been done to it.
Raw (uncooked) – this may contain some botulism, but generally harmful only to
children less than 1 year old.
Crystallized – is smooth and creamy.
Liquid – has been heated and filtered to remove impurities. This process also
destroys many of the nutrients inherent in natural whole comb honey.
    If the honey has sat on the shelf long enough to crystallize, all you need to do
is heat it and it will liquefy again.
           Honey Butter
1 cup butter
1 cup bland honey
    Combine with electric mixer till smooth and creamy. Store in frig in tightly
closed` container.
