Happy Birthday to Mary Ann O’Leary, Pittsburgh, PA !!!

Good morning to one and all. I hope this finds you happy
and in the best of health. Let’s face it, when your health
goes…nothing else matters.


Let it never be said that prayer and diligence are for naught.
As you may recall, I received notice from my landlord of
a rent increase. It was in the form of a note left in my postal
mail box (illegal, might I add!) telling me of the increase and
a new lease to sign was attached. The lease itself had a lot of
problems with it. Even beyond the astronomical new rent
amount, it was worthless as a method of protecting anyone’s
interest but in particular the landlord. So, I thought about it
a few days and responded with a letter of my own. I explained
that the increase was not justified and that we would be moving.
I further explained a few areas where they could change the form
(made up on their home computer) to protect themselves when
the next tenants were signed. A few days went by and I received
a call from the landlord (the “missus”). My tummy was full of
butterflies as I was prepared for her to jump through my back side
for insinuating they knew nothing of lease agreements. (By the
way, I was VERY nice in the letter.) I let her speak. Lo and behold!
She apologized to me. She said she didn’t know anything about
such things, thought it was very kind of me to be concerned with
her interests and asked exactly WHAT I thought a fair increase
would be. We agreed on a small increase, she explained how much
she enjoyed having me live here and would take a financial loss
rather than lose me as a tenant. God is good…


There’s more good news.   I am working with a new ezine
server to switch over from Topica.com. I am still working
out the kinks but will hopefully have something in working
order within a few days. Right now, I am only sending the
ezine to myself and one test dummy* (sorry, dear!) through
the new provider. Once we’re satisfied it’s in good working
order, I will switch over. Now, it may require that you become
a member ALL OVER AGAIN. Yes, I know that’s a royal
pain in the bundt pan. However, if possible, we will export
the email addresses from Topica to the new server without
that. We have a group of very loyal subscribers and I feel
quite confident that everyone will do whatever is necessary to
switch over to the new server. I am aiming for NO interruption
in delivery so you should get your a2z “fix” daily as usual.
*Test dummy – is a brilliant person with the skills to help me
sort the mess out without killing myself over it, lol.


Also, Cumuli.com seems to be up and running. They’ve made
some improvements which include the “default” rating of “10”
rather than “5”. That will be very helpful for us older folks who
tend to do things without looking, lol. Your vote is appreciated.

~*~ DID YOU KNOW ? ~*~



Chipotle is a dried, smoked jalapeno chile pepper that is available
dried or canned in a sauce. The canned chile is packed in a wonderful
smoky-flavored sauce. There is no real good substitute for the smoky
chile except using a dried red chile that is soaked to soften and then
removing its seeds, and adding it to the sauce along with a drop of
Liquid Smoke seasoning.

Bubble and Squeak

1 pound cold potatoes
2 ounces dripping or lard
1 onion, finely chopped
8 ounces cooked cabbage or sprouts, chopped
Salt
Black pepper, freshly ground

Finely chop the potatoes and crush slightly. In a frying pan melt half
the fat and lightly fry the onion. Mix in the potato and greens and
season well. Add more dripping or lard. Press the bubble into the hot
fat and fry over a moderate heat until browned underneath. Turn the
bubble over, add the last of the fat and fry until the other side is
browned.

Prep Time: 10 minutes
Cook Time: 20 minutes
Difficulty: Easy

We have exactly what you ordered, Mary Ann. I've added
a beet salad. You may serve the stroganoff with either rice
or wide egg noodles (I prefer the latter). The dessert, like
birthdays, should only come once a year. Eat it any more often
and you'll have to spend the remainder of the year on the
treadmill. Enjoy!

BEET SALAD
BEEF STROGANOFF
(WHITE RICE OR WIDE EGG NOODLES)
ORIGINAL GERMAN SWEET CHOCOLATE CAKE

BEET SALAD

Source: Easy Chef's One Million Recipes CD-ROM

1 head lettuce, cut up
2 cans beets, sliced
1 c. sugar
1 c. mayonnaise
3 tbsp. vinegar
1/2 c. onions

Wash lettuce and slice into smaller pieces. Drain beets. Save liquid.
Cut into slices. Mix together.   Add mayonnaise, onions, sugar, and
vinegar. Chill and serve. Must be eaten on the day prepared. Recipe
can be halved.



BEEF STROGANOFF
Makes 6 servings

2 tablespoons peanut oil
1 tablespoon butter
1 lb beef tenderloin steak or boneless sirloin steak, cut crosswise into
1/2-inch strips
1 onion, thinly sliced
1/2 lb mushrooms, thinly sliced
salt
freshly ground black pepper
1 tablespoon all-purpose flour
1/2 cup beef stock or veal stock
1 tablespoon Dijon mustard (optional)
1 cup sour cream
2 tablespoons chopped dill
1 pinch cayenne pepper
rice, to serve

Heat a wok until very hot. Add oil and swirl to coat wok. Add half of
the beef strips.
Stir-fry 1 minute or until just browned and still pink in center. With a
slotted spoon, remove beef to a bowl. Reheat wok and add remaining beef
strips. Stir-fry 1 minute and turn beef and any juices into bowl.

Add butter to wok, then add onion. Reduce heat to medium and stir-fry
onion 3 or 4 minutes or until softened and beginning to color. Add
mushrooms and increase heat; stir-fry 2 minutes or until mushrooms and
onions are softened and golden. Add salt and pepper and stir in flour
until well-blended.

Add beef broth and bring to a boil, then simmer 1 minute or until sauce
thickens. Stir in mustard, if using, and gradually add the sour cream.
(Do not allow sour cream to boil.) Return beef strips and any juices to
sauce, stir in chopped dill and simmer 1 minute or until beef is heated
through. Sprinkle a little cayenne. Serve with rice or wide egg noodles.



ORIGINAL GERMAN SWEET CHOCOLATE CAKE

Source: Easy Chef's One Million Recipes CD-ROM

1 (40 oz.) Baker's German sweet
   chocolate
1/2 c. boiling water
1 c. (2 sticks) butter or oleo
2 c. sugar
4 eggs, separated
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1/2 c. salt
1 c. buttermilk
Coconut-Pecan Frosting (recipe follows)

Melt chocolate in boiling water; cool. Cream butter and sugar. Beat in
egg yolks. Stir in vanilla and chocolate. Set aside.    

Mix flour, soda and salt. Beat in flour mixture, alternately with
buttermilk.

Beat egg whites until stiff peaks form; fold into batter.

Pour batter into 3 (9") layer pans, lined on bottoms with waxed paper.
Bake at 350 degrees for 30 minutes or until cake springs back when
lightly pressed in center. Cool 15 minutes; remove and cool on rack.

Spread frosting between layers and over top of cake.


Coconut-Pecan Frosting:

Combine 1 cup evaporated milk, 1 cup sugar, 3 slightly beaten egg yolks,
1/2 cup oleo and 1 teaspoon vanilla in saucepan. Cook and stir over
medium heat until thickened, remove from heat. Stir in 1 1/2 cups (3
1/2 oz.) coconut and 1 cup pecans. Cool until thick enough to spread.
Makes 2 1/2 cups.

POT ROAST WITH GRAVY AND VEGETABLES

1 roast, 2 to 4 pounds - lean chuck, bottom round, rump, etc.
salt and pepper, to taste
1 large bay leaf
1/4 cup water
4 tablespoons flour
1 teaspoon Kitchen Bouquet or other gravy browning/seasoning sauce
1 clove garlic, minced
2 medium onions, cut in wedges
4 to 6 medium potatoes, peeled and cut in 1-inch chunks
2 to 4 carrots, halved and quartered

Place roast in the slow cooker/Crock Pot; sprinkle with salt and
pepper. Make a paste of the flour and cold water; stir in Kitchen
Bouquet and spread over roast. Add garlic, onion, bay leaf, potatoes,
and carrots (or use any other root vegetable such as parsnips or
rutabaga). Cover and cook on low for 8 to 10 hours. Taste and add
more salt and pepper to taste. Serves 4 to 6, depending on the size of
the roast.



AUSTRIAN CARAWAY STEAK STRIPS
Makes 4 to 5 servings

1 pound beef round steak,
     cut into bite-size strips
1 cup chopped onion
1 cup thinly sliced carrots
1 clove garlic, minced
2 tablespoons cooking oil
3/4 cup beef broth
1 tablespoon red wine vin-
     egar
34 teaspoon caraway seeds
1/2 teaspoon dried marjoram,
     crushed
4 tablespoons flour
3/4 cup sour cream
cooked noodles

Cook beef strips, onion, carrot and garlic in
cooking oil until meat is browned and onion
is tender. Stir in beef broth, vinegar, caraway
seeds, marjoram, 1/4 teaspoon salt, and dash
pepper. Bring to boiling; reduce heat. Simmer,
covered, 15 minutes.

Stir flour into the sour cream. Stir into beef
mixture; heat until thickened, but do not boil.
Season to taste with salt and pepper. Serve
over hot noodles.



CHOCOLATE DEPRESSION CAKE

3 cups of flour
2 cups of sugar
1/4 t. salt
2 t. baking soda
2 t. vanilla
3/4 cup of oil
2 T. vinegar
2 cups of cold water
10 level T. cocoa

Sift dry ingredients into a bowl. Add wet ingredients and mix well with
a large spoon. Put into a greased and floured 9 by 13 pan. Bake 30
minutes at 350.



CHOCOLATE-MACADAMIA NUT PIE

1 cup (6 ounces) semisweet chocolate morsels
1 2/3 cups crushed chocolate wafers (6 ounces)
1/2 (8-ounce) package cream cheese, softened
2/3 cup sugar
1 1/2 tsp. vanilla extract
1 (3 1/2 ounce) jar macadamia nuts, coarsely chopped
2 cups whipping cream
Garnishes; unsweetened whipped cream, chocolate shavings, and toasted
macadamia nuts

PLACE chocolate morsels in top of a double boiler, bring water to a
boil. Reduce heat to low; cook until chocolate melts; stirring often.
Remove from heat, and set aside.
COMBINE crushed wafers and butter. Firmly press mixture in bottom of a
lightly buttered 9 inch spring form pan.
COMBINE melted chocolate, cream cheese, sugar, and vanilla in a mixing
bowl; beat at medium speed with an electric mixer until smooth. Fold in
macadamia nuts.
BEAT 2 cups whipping cream at high speed until soft peaks form. Add
about 1/4 of the whipped cream to the chocolate mixture, and beat until
blended. Fold remaining cream into chocolate mixture. Pour into crust.
COVER and freeze 4 hours or until firm.
TO SERVE, carefully remove sides of spring form pan; let pie stand 10
minutes before serving. Garnish if desired with dollops of whipped
cream, topped with shaving of chocolate and chopped macadamia nuts.



LEBKUCHEN

These have molasses in them instead of honey, and were truly baked in
the old-fashioned German way. The dough, which had to sit for 3 weeks in
a cool basement, was made early in December so the cookies would be
ready by the Christmas holidays. They are still great if you don't have
the full 3 weeks. But the flavors really have time to marry this way and
they have such a wonderful flavor.

Ingredients:
3 lbs (1350 g) Flour (about 6 cups, 1.5 L)
1 1b.(675 g) molasses (about 3 cups, 750 ml)
1 cup (250 ml ) brown sugar
5 oz (140 g) Lard or shortening
2 oz (60 g) candied orange peel
1 cup (250 ml) rose water (or 1 cup water)
1/2 oz (15 g) Cloves
1/2 oz (15 g) Cinnamon
1 grated lemon rind
1 cup (250 ml) almonds, blanched and split in halves
Candied Fruit and raisins. (3/4 to 1 1/2 C)

Directions:
Bring molasses and sugar to a simmer, and cook 5 minutes. (to dissolve
sugar) Let cool then stir in everything else, with the flour being last.
Let the dough stand covered, at room temperature for 3 weeks. If you
don't have that much time its okay. Roll out fairly thin, cut into
rectangles 1 and a half inches by 3 inches (4 x 8 cm) with a fluted
cutting wheel, or just a knife. Roll out fairly thin, cut into

degree oven for 10 minutes, and let cool. Check the texture. If you
desire a crispier texture, bake an additional 5 min.
This recipe makes lots of cookies, but they keep well if kept in a
tightly covered tin or in the freezer.



MEXICAN BREAKFAST CASSEROLE
Yield: 10 servings

6 poblano chile peppers, about 1 1/2 pounds
1 teaspoon unsalted butter
1 1/2 pounds Mexican chorizo, or other hot sausage, removed from
casings and crumbled
1 cup chopped yellow onions
1/2 cup chopped red bell peppers
4 teaspoons minced garlic
4 teaspoons chili powder
5 corn tortillas, quartered
10 large eggs
3 cups half-and-half
1/2 teaspoon hot red pepper sauce
1/2 cup chopped green onions, green tops only
1/4 cup chopped fresh cilantro
1 1/2 cups grated pepper jack
1 1/2 cups grated medium cheddar
Sour Cream, garnish
Picante Sauce (store bought), garnish

Instructions
Roast the peppers by placing them on an open gas flame, turning them
frequently with tongs until all sides are charred black, about 7 to
10 minutes. (Alternately, the peppers can be roasted under a broiler,
or on top of a gas or charcoal grill.) Place the blackened peppers in
a plastic or paper bag, and let rest until cool enough to handle,
about 15 minutes. Peel the peppers, split in half lengthwise, and
remove the seeds and the stems.

Butter a 9 by 13-inch baking dish. Spread the chiles in a flat layer
across the bottom of the dish.

In a large skillet, cook the sausage over medium-high heat, stirring
to break up the meat, until browned. Add the onions and bell peppers,
and cook, stirring, for 4 minutes. Add the garlic and chili powder,
and cook, stirring, for 1 minute. Remove from the heat.

In a large bowl, whisk the eggs and half-and-half with the hot sauce,
salt and black pepper.

In another bowl, combine the green onions, cilantro, jack, and
cheddar, and mix well.

Spoon 1/3 of the sausage mixture over the chiles in the dish, top
with 1/3 of the tortilla quarters, and 1/3 of the cheese mixture.
Repeat layering, ending with a cheese layer. Pour the egg mixture
over the ingredients. Let rest, covered, in the refrigerator for at
least 6 hours, or overnight.

Preheat the oven to 350 degrees F.

Bake until bubbly and golden brown, and a knife inserted into the
custard comes out clean, about 1 hour and 10 minutes to 1 hour and 15
minutes. Remove from the oven and let rest 10 minutes before serving.
Serve with sour cream and picante sauce.

CURRY POWDER

1/2 cup coriander seeds
5 tablespoons black pepper-
       corns
1 tablespoons whole cloves
2 tablespoons cumin seeds
1 tablespoons fenugreek
       seeds
1/2 cup turmeric
1 tablespoons mace
1 tablespoon cinnamon
1 1/2 teaspoon ground
       ginger
1/2 teaspoon cayenne
       pepper

Grind seeds, coarsely. Place all spices in a heavy
skillet or roasting pan. Roast, stirring often, until
spices have darkened and begun to give off an
aroma. This will take approximately 5 minutes on
top of stove or 20 minutes in a 375-degree oven.

Cool, then place in a jar with a tight-fitting lid.

Makes about 1 1/2 cups.


MADRAS-STYLE CURRY PASTE

1 cup ground coriander
1/2 cup ground cumin
1 tablespoon freshly ground
       pepper
1 tablespoon Szechwan pepper
1 tablespoon black mustard
       seeds
1 tablespoon turmeric
1 tablespoon salt
4 cloves garlic
1 piece gingerroot, about 3
       inches long
1-1 1/2 cups cider vinegar
3/4 cup oil

Combine spices and salt. Crush garlic, peel and
grate gingerroot, and add to spice mixture. Add
vinegar to make a smooth paste.

Heat oil in a heavy skillet. Place spice mixture
in pan, reduce heat, and cook, stirring constantly,
until spices are cooked and oil separates out --
3 to 5 minutes.

Cool, then bottle.

Makes about 1 3/4 cups.


GREEN CURRY PASTE

1 teaspoon fenugreek seeds
1 cup mint leaves
1 cup coriander leaves
1/2 cup cider vinegar
6 cloves garlic
3 tablespoons grated ginger-
       root
2 teaspoons salt
2 teaspoons turmeric
1/2 teaspoon cloves
1 teaspoon cardamom
1/2 cup sunflower oil
1/2 cup sesame oil

Soak fenugreek seeds in water overnight. Place
seeds in a blender (or food processor) with mint,
coriander, vinegar, garlic and gingerroot. Blend
until completely smooth. Add salt and remaining
spices.

Heat oils, add spice mixture, bring to a boil and
then turn off heat. Cool and bottle.

Makes about 2 cups.

~*~ HEART HEALTHY (HH) ~*~

not completely free of fat, cholesterol and calories, they
should make your daily chore of eating more wisely just
a little bit easier and a whole lot tastier!



LOW FAT TIRAMISU

To make it you will need:

1 tsp vanilla
3/4 cup sugar (or sugar substitute)
1 low fat pound cake
2 packages Neufshatel cream cheese (1/3 the fat)
1 cup instant coffee in a spray bottle
1 Tbsp cocoa
2 cups low fat cool whip
Marsala wine in spray bottle
1/2 cup nonfat milk

Slice the pound cake and spray with coffee and wine lightly.
Mix cream cheese with sugar and vanilla. Add milk and 1 tsp of wine.
Layer pound cake and cream cheese mixture in pan.
Add cool whip over the top and spray lightly with wine.
Dust cocoa over the top.

~*~ COOKING FOR TWO ~*~

two. Not many recipes are mindful of the need to have it
"scaled down" for you. I hope this helps.



ASIAN CHICKEN SALAD WITH GINGER PEANUT DRESSING

This makes 2 generous servings & is a light meal in itself or can be
used as a side salad if you omit the chicken.

1 chicken breast - cooked / poached
2 carrots - julienned
1 Gala Apple (any firm apple with peels on) - cut into strips
1/2 each, cut into strips, red bell pepper, yellow bell pepper
1/2 head romaine lettuce - chopped (iceberg works)
1/4 C peanut oil
3 T creamy peanut butter
2 T rice vinegar
1 T soy sauce
2 t light brown sugar
1 t each: minced peeled ginger root, Asian chili / red curry paste< more
or less to taste, this adds heat
1/2 C canned fried chow mein noodles
1/4 C dry roasted peanuts - chopped
1 green onion - diced with green stems

1. Cook chicken until done and cool, shred meat, set aside.
2. Combine carrots, apples, bell peppers and lettuce in a large bowl,
set aside.
Add cooled chicken to salad.
3. Combine peanut oil, peanut butter, rice vinegar, soy sauce, brown
sugar, ginger and chili paste in a small bowl. Whisk until smooth.
4. Before serving, lightly dress the salad with the dressing until
coated. (you will not use all the dressing). Save unused dressing &
serve at the table.
5. Serve up on plates, sprinkle with peanuts, chow mein noodles and
green onions.
