1. Recipe: Kahlua Cream Bread
Categories: Shaped bread, Sweet bread
Yield: 12 Servings
1/8 c Kahlua; (you can use more; just use less water.)
1/4 c Water
1 5 oz can nonfat evaporated milk
1 ts Salt
1 1/2 ts Canola oil
3 c Bread flour
2 tb Brown sugar
1 ts Yeast
--------------------FILLING-------------------------
Miniature chocolate chips; (lots)
Place all ingredients, except for filling, into bread machine in the
proper order for your machine. Use dough cycle. At end of dough cycle,
remove dough and place on lightly-floured bread board. Cover and let
rest for 10 minutes. Roll out dough into a rectangle, sprinkle with lots
of miniature chocolate chips, and roll up into a loaf. Place in greased
bread pan, cover and let rise for 45 minutes. Slash loaf with a lame or
razor blade. Brush with milk. Bake in preheated 375 deg. oven for 25 -
30 minutes. Remove loaf onto a cake rack and let cool.

2. Recipe: Kamilla's Spice Bread-In-A-Jar
Categories: Breads, Desserts
Yield: 7 Servings
2/3 c Shortening
2 2/3 c Sugar
2 c Applesauce
2/3 c Water
4 Eggs
2 ts Soda
1/2 ts Baking powder
1 1/2 ts Salt
1 ts Cinnamon
1 ts Cloves
1 c Chopped walnuts
1 c Raisins
Cream shortening and sugar in mixer bowl until light and fluffy. Add
applesauce, water and eggs; mix well. Add mixture of flour, soda, baking
powder, salt and spices; mix well. Stir in walnuts and raisins. Spray 7
wide-mouth 1 pint jars with nonstick cooking spray. Fill jars 2/3 full.
Bake at 325 degrees for exactly 45 minutes. Remove jars from oven one at
a time and seal quickly with 2 piece lids, pressing bread down if
necessary. Let stand until cool. Give as gifts. Use only jars suitable
for canning.

3. Recipe: Karen's Chicken Salad
Categories: Chicken, Salads, Sandwiches
Yield: 4 -6 serving
1 cn (12-1/2 oz) white chunk chicken; drained
2 Granny smith apples; cored, peeled, sliced
1/2 c Walnuts; roughly chopped
2 tb Mayonnaise
2 Stalks celery; washed, trimmed, diced (up to 3)
Combine all ingredients; toss to combine.
Presentation: serve as a main dish salad or as a sandwich on a flaky
croissant with alfalfa sprouts, swiss cheese and tomato.

4. Recipe: Kfc Cole Slaw
Categories: Side dishes
Yield: 1 Servings
4 1/2 ts Tarragon vinegar
6 1/2 tb Vegetable oil
3/4 c Chopped onion
2 1/2 c Miracle Whip salad dressing
1 c Sugar
2 Carrots
2 Heads of cabbage
Mix oil, onions and sugar. Add Tarragon vinegar. Fold in Miracle Whip.
Pour over grated carrots and cabbage. Fold in well. Refrigerate in an
air-tight covered dish. Best if made the night before serving.
The tarragon is the secret seasoning. Enjoy. Shelly (Rusty's Wife)

5. Kidney Bean and Cheesy Rice Casserole
INGREDIENTS
2 (19-ounce) cans Dark Red Kidney Beans, rinsed and drained
1 tablespoon water
1 cup red onion, diced
1 teaspoon cumin
1 garlic clove, diced
1 (10-ounce) package fresh spinach, chopped
1 (16-ounce) jar no-salt-added picante sauce
8 cups cooked rice, no salt added
2 medium tomatoes, sliced
1/2 cup shredded reduced-fat Cheddar cheese
1/2 cup shredded reduced-fat Monterrey Jack cheese
1/2 cup nonfat sour cream
PREPARATION
Preheat the oven to 350°F. Heat water in a nonstick skillet. Add onion,
cumin, and garlic and sauté for 2 to 3 minutes. Add spinach and sauté
until wilted. Set aside
Combine Dark Red Kidney Beans and picante sauce together; spread 2 cups
of this mixture in the bottom of 9 x 13-inch baking pan coated with
nonfat cooking spray. Layer 4 cups of rice over bean mixture. Arrange
tomato slices on top of rice. Layer spinach mixture, remaining rice, and
2 cups of bean mixture over tomato slices.
Cover and bake for 30 minutes. Then sprinkle with cheese and bake,
uncovered, for another 10 minutes or until cheese melts. Spoon 1
tablespoon sour cream on top of each serving.
