1. Peanut Butter Cookies

Ingredients:
1 box (18.25 ounces) yellow cake mix
2 eggs
1/3 cup vegetable oil
1/2 cup peanut butter
1 cup chopped peanuts
3/4 cup peanut butter chips
1/2 cup granulated sugar

Directions:
Heat oven to 350° F. Stir cake mix, eggs, oil and peanut butter in large
bowl until batter forms. Stir in chopped peanuts and peanut butter
chips. Using heaping tablespoon of batter, roll cookie dough into 1 1/2
to 2-inch balls. Dip half of each cookie in sugar, then place sugar side
up on ungreased baking sheets. Bake for 15 minutes, until cracked and
lightly browned. Let cool 3 minutes on pan on wire rack. Transfer to
rack to cool completely. Serve or store in airtight container up to 1
week.
Yield: 2 to 3 dozen

2. Perfect Rib Roast

Great for family gatherings at the holidays, this elegant roast has a
zesty rub

that compliments this excellent cut of meat perfectly.
Prep Time: 30 minutes
Cook Time: 1 hour 45 minutes
Yield: 6 servings

Ingredients:
1 1/2 teaspoons lemon-pepper seasoning
1 1/2 teaspoons paprika
3/4 teaspoon garlic salt
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon cayenne pepper
1 (4 pound) boneless beef rib roast

Directions:
Preheat the oven to 350° F (175° C). In a small dish, mix together the

lemon-pepper seasoning, paprika, garlic salt, rosemary and cayenne
pepper.

Rub over the entire roast. Place the roast with the fat side up on a
roasting

rack set inside a shallow roasting pan. Bake for 1 hour and 40 minutes
in the

preheated oven, or until the roast reaches your desired degree of
doneness,

or at least 145° F (63°C) for medium-rare. Medium is recommended: 160° F


(70° C). Let the roast rest for 10 to 15 minutes before carving into
thin slices.

3.                   Appetizers, Salads and Breads:
                     Pesto Parmesan Spread
    
                from Stop and Smell the Rosemary...

    INGREDIENTS:
    
    2 tablespoons chopped fresh parsley
    1/2 cup chopped fresh basil
    2 tablespoons chopped red or green onion
    1 clove garlic, chopped
    1 ounce Parmesan cheese, freshly grated (1/4 cup)
    8 ounces cream cheese, softened
    4 tablespoons unsalted butter, at room temperature

    1 loaf French bread, cut into 1/4-inch slices
    shredded Parmesan cheese
    paprika or cayenne pepper
    
    TO PREPARE:
    
    Blend parsley, basil, onion, garlic, and grated Parmesan in a
    food processor. Add cream cheese and butter, blending
    thoroughly. Transfer mixture to a bowl. Cover and refrigerate.
    
    Just before serving, spread cheese mixture on French bread
    slices. Sprinkle with shredded Parmesan. Broil 1 to 3 minutes,
    or until edges begin to brown. Sprinkle with paprika or
    cayenne. Serve immediately.
    
    YIELDS 1-1/2 CUPS

4.   PINEAPPLE MARGAHOOTIES

Pineapple Tequila:

2 pineapples, trimmed and cubed
2 vanilla beans
1/2 cup brown sugar
2 quarts Tequila

Put pineapple tequila ingredients into a tight sealing jar. Leave for
at least a week, stirring every so often.


The Margarita:

12 oz lime juice
12 oz pineapple tequila
4 pineapple chunks
ice

Put the lime juice, pineapple tequila, and pineapple chunks in a
blender. Fill to the top with ice. Blend until smooth and frozen.

                      Potato Casserole

INGREDIENTS:

6 potatoes, peeled, sliced and boiled
2 cups grated Cheddar cheese
1/4 cup melted butter
1/3 cup chopped green onions
2 cups sour cream, at room temperature
1 teaspoon salt
1/4 teaspoon pepper
2 Tablespoons butter

TO PREPARE:

While potatoes are still quite warm, mix lightly with
cheese and melted butter. Mix onions and sour cream
together and add to potatoes. Add salt and pepper. Place
mixture in a 9x13 pan and dot with butter. Bake at 325
degrees for about 20 minutes or until thoroughly heated.

SERVINGS: 6 - 8
