                                        Oat Bran Muffins

1 tablespoon lemon juice
2 Granny Smith apples, unpeeled
1/2 cup walnut pieces
1 tablespoon vegetable shortening
3/4 cup plus 1 tablespoon all-purpose flour
1 3/4 cups oat bran
1/2 cup rolled oats
1/2 cup tightly packed light brown sugar
1/2 cup raisins 1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
3/4 cup buttermilk
1/2 cup skim milk
4 tablespoons margarine. melted
2 eggs whites, lightly beaten
1/2 teaspoon pure vanilla extract
1/2 pint strawberries, stems removed, and sliced 1/4 inch thick
1/2 cup blueberries, rinsed and picked of any stems
:) Paring knife, cutting board, French knife, three stainless-steel bowls
(one large,) measuring spoons, measuring cup, baking sheet, saute pan,
twelve 4-ounce muffin cups, rubber spatula colander
Preheat the oven to 325 degrees.
Acidulate 1 quart water with 1 tablespoon lemon juice. Core and quarter the
unpeeled apples. Cut into 1/4-inch dice and immediately place into the
acidulated water. Set aside until needed.
Toast the walnut piece on a baking sheet in the preheated over for 12
minutes. Allow to cool to room temperature, then lightly crush with the
bottom of a saute pan. Adjust oven temperature to 400 degrees.
Lightly coat muffin cups with vegetable shortening. Dust the cups with a
total of 1 tablespoon flour and shake out the excess.
In a large stainless-steel bowl, stir together the oat bran, remaining 3/4
cup flour, rolled oats, light brown sugar, raisins, baking, soda (first
breaking up any lumps,) baking powder, and cinnamon. In a separate bowl
thoroughly combine the buttermilk, skim milk, margarine. egg whites, and
vanilla extract.
Drain the apples in a colander and rinse under cold running water. Shake

the 12 muffin cups. Place the muffin cups in the preheated oven and bake

25 minutes. Cool the muffins for 5 to 10 minutes before removing from the
