VEAL GORGONZOLA

Yield: 2 servings

INGREDIENTS

-  1 tablespoon flour
-  Salt and freshly ground black pepper, to taste
-  2 (4 oz.) veal cutlets, fat trimmed
-  Olive oil cooking spray
-  1/2 cup fat-free milk
-  2-1/2 tablespoons crumbled Gorgonzola cheese

DIRECTIONS

Place flour on a plate and season with salt and pepper. Dip
veal cutlets in the flour, making sure both sides are coated.

Heat a small nonstick skillet over medium-high heat and spray
with cooking spray. Add one cutlet and brown 2 minutes. Turn
and brown 1 minute. Transfer to serving dish and add second
cutlet to skillet. Brown 2 minutes, turn, and brown 1 minute.
Remove to serving dish and sprinkle both cutlets with salt
and pepper.

Add milk to the skillet and scrape up the brown bits in the
bottom of the pan. Immediately add cheese and stir to melt
cheese and make a smooth sauce. Taste for seasoning. Add
pepper if needed (the cheese should provide enough salt).

Spoon sauce over cutlets and serve.
