He would want that I think. It isn't easy to do, as it hurts with every
word I write, but, I'll try.

Rob's own story 65
Life didn't get easier for Rob for very long. Bett fought with all the
the staff until there was only one left who would come into the home to
help care for her. Bett's fowl language & abusive attitude had sent them
all away. They couldn't take any more. The one staff that would still
come, came cause she felt sorry for Rob & she took the abuse from Bett,
for him. In the meantime, infection still not healed, Rob had to take
over care whenever this one lady wasn't working. Bett's health was
deteriorating as she did nothing for herself. Doctors said she could be
doing more for herself, rather than Rob & Fokus staff doing it all; so
Bett refused to let Doctors into the home again too. The upbeat hope of
a better life for Rob, once he was in the electric wheelchair, was
sinking into deeper despair. How much longer would he live himself,
under these adverse conditions?

Apple Baba (Yablochnaya Baba)
4 tart apples (such as Granny Smith), peeled, cored, quartered & thinly
sliced crosswise
2 1/4 cups granulated sugar
1 teaspoon cinnamon
4 large eggs
1 cup vegetable oil
1/2 cup fresh orange juice
2 teaspoons vanilla extract
4 cups unbleached all-purpose flour
1 teaspoon baking powder
Confectioners' sugar for sprinkling
Preheat oven to 350 degrees F. Grease a 10-inch tube pan.
Place the apples in a large bowl, sprinkle with 1/4 cup of the sugar &
the cinnamon & set aside.
In a large bowl, beat the eggs & the remaining 2 cups of sugar with an
electric mixture until pale yellow & thick. Gradually beat in the oil,
orange juice & vanilla extract.
Sift together the flour & baking powder. Gradually add it to the egg
mixture, stirring with a wooden spoon. You will have the consistency of
thick honey. Fold the apples into the batter, making sure they are well
distributed. Pour the apple batter into the prepared pan & smooth the
top with a rubber spatula. Bake until the top is well browned &
splitting, about 1 1/2 hours.
Invert the baba onto a rack & cool. Sprinkle with confectioners' sugar
just before serving. Serves 8 to 10.
