Chicken Al Vino - most TNT

CHICKEN AL VINO
Kyckling al vino
2 tbs oil
4 chicken fillets, in all approx 1 1/3 lbs
1 tsp salt
2 garlic cloves
2 rosemary sprigs
2/3 cup white wine or apple juice
Heat a frying pan or a shallow, wide saucepan with some oil. Brown the
chicken fillets on both sides and flavor with salt and pepper. Take up the
chicken and set aside while making the sauce.
Peel and chop the shallots. Coarsely chop the tomatoes. Peel and slice the
garlic and coarsely chop the rosemary. Put vegetables and rosemary in the
pan and sautee lightly over low heat for a couple of minutes. Place the
chicken fillets on top and add white wine (cooking wine) or apple juice. Let
simmer slowly for about 15 minutes.
Decorate with some fresh basil leaves and serve with pasta and a green
