Write Now to Prevent Increased Chicken Consumption in Your Community
Headlines all over the country this week report a newfound association
between breast cancer and red meat. (Visit http://news.google.com and
enter the search terms breast cancer red meat if you've not yet seen
the story.)
Historically, bad news about red meat has been bad news for chickens,
as consumers switch from "beef" to "poultry" under the mistaken
assumption that chicken flesh is a safe meat. You can help prevent that
from happening this time around.
If your local newspaper has covered the red meat and breast cancer
story, write a letter in response, noting that chicken flesh also
contains saturated fat, cholesterol, and -- yes -- carcinogens. You may
want to note that oven-broiled, pan-fried, or grilled chicken flesh
actually contains more of the cancer-causing compounds called
heterocyclic aromatic amines than does red meat or that grilled chicken
contains 480 nanograms per gram of the carcinogen PhIP, which is
suspected as a cause of -- yes -- breast cancer.
