Texas Gumbo  Jed Wubben

2 tablespoons of bacon fat
1 large onion, minced
2 cups of tomatoes
1 green pepper, chopped
1 cup of sliced okra
2 cups of whole kernel corn
Salt and pepper

Cook the minced onion in bacon fat until yellow and transparent. Add the
tomatoes, green pepper, okra and seasonings and simmer together until
tender (about 20 minutes). Add a bit more water if too thick. Add the
corn and cook 15 minutes. Served over fluffy boiled rice. Tip: if you
have any gumbo left over add it to a quart of chicken stock.
