Broccoli Casserole I

Amount Measure Ingredient -- Preparation Method

2 pounds fresh broccoli
1 cup water
1/2 teaspoon salt
1/4 cup chopped onion
1/4 cup chopped celery
1/4 pound fresh mushrooms -- sliced
1 tablespoon melted butter
1 8 oz. can water chestnuts -- drained
1/4 teaspoon garlic salt
1/4 teaspoon pepper
8 ounces Velveeta cheese
1 can cream of mushroom soup
1 cup shredded Cheddar cheese

Cut broccoli into 1" pieces. Bring water to a boil. Add 1/2 teaspoon
salt along with broccoli. Cover and reduce heat. Simmer for 5-8 minutes or
until crisp-tender. Drain well. Sauti onion, celery, and mushroom mixture,
broccoli, and water chestnuts. Set aside. Combine Velveeta and soup. Cook
over low heat, stirring until cheese melts. Pour over broccoli mixture. Stir
in garlic salt and pepper. Spoon mix into greased 2 quart casserole. Bake at
3500 for 25 minutes. Add shredded Cheddar to top of casserole and bake until
cheese melts.

Broccoli Casserole II

Amount Measure Ingredient -- Preparation Method

1 16 oz. pkg frozen broccoli -- or one bunch fresh
1/2 cup (1stick) butter or margarine -- plus extra to
grease dish
1 egg -- slightly beaten
1 cup mayonnaise
1 can cream of mushroom soup
1 medium onion -- chopped
2 cups shredded Cheddar cheese
1 stack (about 42) saltine crackers -- crumbled

Cook frozen broccoli according to package directions, or, if using
fresh broccoli, cook in water in microwave or on stovetop until tender.
Drain. Preheat oven to 3500. Coat a 2-quart casserole dish with butter.
Place broccoli evenly in bottom of dish and set aside. In a medium bowl,
combine the egg, mayonnaise, soup, and onion. Mix well. Season with salt and
pepper. Spread mixture evenly over the broccoli. Sprinkle with cheese. In a
saucepan, melt the butter. Stir in crumbled saltines. Spread crumbs over
cheese layer. Bake 30 to 40 minutes.
