Crockpot Chicken With 20 Cloves of Garlic
Makes 6 servings
1 teaspoon salt
1 teaspoon paprika
1/2 pepper
1 tablespoon olive oil
1 cut-up whole chicken
1 large onion, peeled and sliced
1 medium bulb garlic, about 20 cloves, broken apart but cloves not peeled
Season chicken: In a small bowl, make a paste from seasonings, oil.
Spread evenly over each chicken piece.
Assemble ingredients, cook: In a 5- to 6-quart crockpot, place onion
slices. Arrange chicken pieces over onion. Place separated but unpeeled
garlic cloves around the chicken. Cover; cook on low setting for 7 to 8
hours.
Presentation: With a slotted spoon, remove chicken, onion and garlic
from slow cooker. Place on serving platter. Squeeze garlic cloves to use
on the chicken (or serve on mashed potatoes or slices of crusty bread).
