Crockpot Black Bean Chili  Richard Lee Holbert

Crockpot Black Bean Chili

Serves 4

1 1/2 pounds boneless pork, cut into 1/2-inch cubes
2 (15 1/2-ounce) cans black beans, drained
1 cup chopped onion
1 cup chopped yellow bell pepper
1 cup your favorite thick, chunky salsa
1 (15 1/2-ounce) can diced tomatoes, with liquid
2 cloves garlic, minced
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon crushed red pepper
1/2 cup sour cream, for garnish
1/2 cup grated Cheddar cheese, for garnish

1. Combine all ingredients (except garnishes) in a 3 1/2 -quart crockpot.
2. Cover and cook on low-heat setting for 7 to 8 hours. Serve in bowls
and top with sour cream and Cheddar cheese.
