DIABETIC CROCKPOT VERY SPECIAL SPINACH

Yield: 8 servings

Via The Diabetic Gourmet Daily Recipe Mailer

INGREDIENTS

3 (10 ounces) boxes frozen spinach, thawed and drained
2 cups low-fat (1%) cottage cheese
1-1/2 cups grated fat-free Cheddar cheese
3 eggs
1/4 cup flour
4 tablespoons (1/4 cup) light, soft tub margarine, melted

DIRECTIONS

Mix together all ingredients.
Pour into crockpot. Cook on HIGH 1 hour.
Reduce heat to LOW and cook 4 more hours.
