COUNTRY APPLE-NOODLE PUDDING

4 cups fine egg noodles
3 eggs, beaten
1/2 cup sugar
1 cup dairy sour cream
1/2 cup milk
1/2 tsp salt
1/2 tsp vanilla
2 cups chopped, peeled apples
1 cup raisins
1/2 cup chopped walnuts
1 cup whipping cream
1 tbs sugar
1 tsp cinnamon

Cook noodles to desired doneness as directed on package; drain and rinse
under hot water. Heat oven to 350 degrees F. Butter a 2-quart casserole. In
large bowl, combine eggs, sugar, sour cream, milk, salt, and vanilla. Stir
in apples and raisins. Fold in cooked noodles. Pour mixture into prepared
casserole. Top with nuts. Place casserole in a 13- x 9-inch pan; pour hot
water into pan, about 1-inch deep. Bake for 75 minutes or until set. Let
stand 10 to 15 minutes before serving. In a small bowl, beat whipping cream
until soft peaks form. Fold in sugar and cinnamon. Serve with warm pudding.
Refrigerate leftovers. Yield: about 12 servings.
