If you are selling translation services via your website I don't think this would necessarily be seen as e-commerce transactions for VAT purposes. It is still a translation service and it does not matter how you physically deliver it to your customer. You'd have to check this with the so-called e-commerce Directive which you can find on the commission's website, particularly with the annexe which lists e-commerce activities.

If it is indeed a translation service provided to private individuals the place of supply (ie the country where you have to account for VAT) would usually be the country where your business belongs and from where you make your supply. THe same applies to business customers in in the same country as you whereas business customers in otehr countries would have to deal with VAT themselves.

I hope this is useful as a preliminary heads up but I agree that you should check this in more detail with a tax advisor in Italy. Anyone should be able to help but if you really cannot find someone who can advise you in this field on the the "big 4" (PwC etc) will be able to help.
