Welcome to our Good Neighbor Recipes edition of Recipe du Jour! On
Fridays we turn over the recipe presentation to you guys to share and
showcase your favorite recipes with the RDJ neighbors. If you have any
questions about any of the recipes offered today, write an email to the
address given with that specific recipe. If you wish to submit your own
favorite, guidelines are at the end of this mailing. And don’t forget to
forward this mailing to all your friends!

For those of us who love green fried tomatoes, this is a sure HIT. Very
easy to do and so goooood !! lou3-@webtv.net

Baked Green Tomatoes

8 med. green tomatoes
1 c. sm bread crumbs, toasted
1-1/2 tsp. salt
1/8 tsp. pepper
3 tbsp. butter
1/3 c. grated Parmesan cheese

Cut tomatoes a little under 1/2 inch in thickness and arrange half of
them in single layer in greased baking dish. Scatter on half of bread
crumbs, salt and pepper. Dot with half the butter. Repeat, making a
second layer. Sprinkle with cheese on top. Bake uncovered 45-50 minutes
at 350F until tender.

* I used the new product called Bacon Salt and it really made a
difference.

Ham Omelet

8 eggs
1/2 cup skim milk
1 tsp Italian seasoning
1/2 tsp each salt,, pepper, hot sauce
1 TBL reduced calorie margarine
1 medium tomato, chopped
1/3 cup finely chopped lean cooked ham

Beat first six ingredients with a fork until blended (do not overbeat).
Melt margarine in a medium non stick killet or omelet pan. Add egg
mixture. As mixture starts to cook, gently lift edges of omelet with a
spatula and tilt pan so uncooked portion flows underneath.
When egg mixture is almost set, spoon tomato and ham over half of
omelet, continue cooking until eggs are set.
Loosen omelet with a spatula and fold in half. Slide into serving
platter.

for donations: there is no pleasant way to sugar coat a fund drive no
matter how hard we try. Some of you folks contribute during the year

SCHLOTZSKY'S DELI BREAD                    

1/2 cup lukewarm water
1 tablespoon granulated sugar
1 package yeast
3/4 cup lukewarm milk
1/2 teaspoon salt
1/4 teaspoon baking soda
2 1/2 cups bread flour (all-purpose will work)
Cornmeal

Stir water, sugar and yeast together and set aside.

Dissolve baking soda in 1/2 tablespoon warm water in medium bowl. Add
warm milk, salt and 1 cup flour; beat till smooth. Beat in yeast mixture
and remaining flour (batter will be thick and sticky, but not as thick
as normal bread batter).

Spray two pie pans with cooking spray and dust with cornmeal. Divide
dough and place in pie pans, cover and let rise for 1 hour.

Preheat oven to 375 degrees F and bake for 20 minutes till golden. Cool
1 hour and cut in 4ths.


This is one of our favorite breads and it is so easy to make. You talk
about great sandwiches, well, this bread makes every sandwich great!

I made this with smashing results. It is my boyfriend's favorite and I
am making it for company this week. I serve this with Jalapeno-Apricot
Pork Tenderloin as the main dish. From a recent issue of Taste of Home:
Cooking for 2 (increase ingred. for more) Tabitha in Va Beach

Mexican Shrimp Bisque
Prep/Total Time: 30 min//Yield: 3 Cups

1/2 cup chopped onion
2    garlic cloves, minced
1 T. olive oil
1 T. all- purpose flour
1     cup water
1/2 cup heavy whipping cream
1 T. chili powder
2 t. chicken bouillon granules
1/2 t. ground cumin
1/2 t. ground coriander
1/2 lb. uncooked medium shrimp, peeled and deveined
1/2 cup sour cream
Fresh cilantro and cubed avocado, optional

1. In a large saucepan, saute onion ad garlic in oil until tender.
Stir in flour until blended. Stir in the water, cream, chili powder,
bouillon, cumin and coriander; bring to a boil. Reduce heat; cover and
simmer for 5 minutes.

2. Cut shrimp into bite-size pieces (I did not, but added it whole);
add to soup. Simmer 5 minutes longer or until shrimp turns pink.
Gradually stir 1/2 cup of hot soup into sour cream; return all to the
pan, stirring constantly. Heat through (do not boil). Garnish with
cilantro and avocado if desired.

Bacon-Wrapped Chicken with Sour Cream Sauce

4 boneless, skinless chicken breasts
8 slices bacon
2 (10 ounce) cans cream of chicken soup
16 ounces sour cream

In a bowl, mix cream of chicken soup and sour cream. Set aside.

Wrap 1 raw chicken breast with 2 pieces of raw bacon. Continue to do
this 3 more times and place in a 9 x 13-inch baking dish. Pour soup and
sour cream mixture on top of bacon-wrapped chicken, making sure all the
chicken is covered. Bake uncovered at 400 degrees F for 1 hour.

Serve with baked or mashed potatoes. Use leftover cream sauce over
potatoes.

My neighbor gave us some fresh green beans from his garden, so I decided
to make something up with them. I like simple, so this is what I ended
up with. It turned out to be really good, and my normally fussy husband

Lemon Pecan Green Beans

2 quarts fresh green beans
1 onion (about 3 inches in diameter, is that medium?)
1 lemon
1/2 cup chopped pecans
2 tbsp olive oil
1/2 tsp "Pinch of Herbs" spice by Lawry's
1/3 cup water

Clean and snap beans into 1 1/2 inch sections

peel and slice onion very thin.

saute onions in the olive oil in a skillet until translucent

Add the green beans, water, and the pinch of herbs spice, mix, and
cover. Cook on high heat for about 10 to 15 minutes or until beans are
cooked, and onions are carmelized.

Transfer to serving dish. Sprinkle chopped pecans evenly over top, and
squeeze the lemon evenly over the top (use the whole lemon, I cut it
into quarters to make it easy to squeeze).

Serves 4. No idea on the nutritional info.

I live in TN and, oh boy, the tomatoes have all come in at once! Here's
a great recipe when you have excess tomatoes you need to do something

Macaroni and Tomatoes

blend enough fresh tomatoes to make approx. 3 cups liquid
1 tablespoon butter
3/4 tablespoon sugar
dash garlic powder
dash salt
3-4 handfuls elbow mac or shell-shaped noodles
1/4 cup shredded mozzarella (optional)

Combine first 5 ingredients in pot. Bring to low boil and add noodles.


Boil on low until noodles done (approx 15 minutes). Top with a sprinkle
of cheese and enjoy

The noodles absorb the flavor of the tomato juice and are delicious.
Before I blend my tomatoes, I let whole tomato sit in almost boiling
water for 3 minutes, then I slide the skin off.

Asian Sesame Apple Slaw
Woman's Day | September 12, 2007
Active Time: 20 minutes Total Time: 35 minutes

INGREDIENTS
1/4 cup seasoned rice vinegar
2 Tbsp dark sesame oil
1 Tbsp honey
1/2 tsp salt
1 jalapeño or serrano pepper, seeded and minced (2 tsp)
1 each Gala, Golden Delicious and Granny Smith apple, halved, cored and
thinly sliced
8 cups finely shredded Napa cabbage
1 red bell pepper, seeded, cut in thin strips
1/2 seedless cucumber, cut in thin strips
3 scallions, thinly sliced
3/4 cup cilantro
2 Tbsp toasted sesame seeds
1 container (3 oz) radish sprouts

PREPARATION
1. In a large bowl, whisk vinegar, oil, honey, salt and chile pepper
until blended. Add apple slices and toss to coat.

2. Add remaining ingredients, except radish sprouts, and toss to coat
(slaw can be made up to 4 hours ahead and refrigerated). Just before
serving, scatter radish sprouts over the slaw. Gently toss.

My son lives in Seattle and brought home a carton of Butternut Squash
Soup that was distributed by Safeway. It was delicious and I've tried
to duplicate it but haven't succeeded. Does anyone have this recipe?
It was sweet, yet spiced with garlic, paprika, maybe some cayenne or hot
pepper flakes. It was very smooth with no lumps. I'd appreciate any
help you can give as it was delicious! Kelly
