Hello Valerie,
I'm not sure this is what you are looking for. At King County Library System we teach some basic classes on Word and Excel. The manuals (and accompanying exercises) we give to the teachers (mostly volunteers) are online at www.kcls.org/nm/manuals and www.kcls.org/nm/exercises. If anything is useful to you, you are welcome to use them for nonprofit and educational purposes. Our volunteer manual (which some might handy as a resource if they are training volunteer teachers) is also available at the same web site.
