6 medium-size red potatoes
1 lb fresh mushrooms, sliced
3 tbs butter or margarine
1 (10-3/4 oz) cream of chicken soup, undiluted
1/4 cup milk
1/4 cup chopped onion
1/2 cup shredded Cheddar cheese
1/4 tsp paprika

Cook potatoes in boiling salted water 25 to 30 minutes or until tender.
Drain and cool to touch. Peel and cut into 1/2-inch slices; set aside.
Sauté mushrooms in butter in a large skillet until tender; set aside.
Combine soup, milk, and onion in a small saucepan; cook over medium heat
until mixture is thoroughly heated, stirring occasionally. Remove from
heat; set aside. Place potatoes in a lightly greased 1-1/2-quart
casserole; top with mushrooms, reserving 1/2 cup. Spoon soup mixture
over mushrooms. Top with cheese and paprika. Bake at 350 degrees F. for
15 minutes. Garnish with the reserved mushrooms. Yield: 6 servings.

Funny. Just yesterday I reminisced about how neat the first snowfall of
the year always is. And how my area only got a light dusting. Well, this
morning I woke up to six inches of “light dusting”. Snow has already
piled up on my driveway and it’s still falling. Somewhere in my backyard
shed I have an assortment of snow shovels. I guess I better find my snow
boots, gloves, scarf, heavy work coat, thermal underwear, Russian
fur-lined-ear-muff cap, electric battery powered socks, and ski mask so
I can begin clearing the driveway. Then again, maybe not…

Rich’s Note:   People sometimes tell me I have a funny way of walking.
What they don’t realize is that I walk the way I do to keep from
breaking my mother’s back. Step, short step, shuffle, lean forward,
step. It’s taken me years, since I was a child, to perfect this gait. I
can walk down any sidewalk in America, I think, with my eyes closed and
not step on any crack in the concrete. “Step on a crack, break your
mother’s back.” Not me. My Mom has never had to worry about me stepping
on a crack in the sidewalk. No, sir. I hope she appreciates it.
