Ziti with Honey Mustard Salmon

1 pound salmon fillet
1 tablespoon honey
1/2 teaspoon fresh-ground black pepper
1 tablespoon cooking oil
1 onion, chopped
1/3 cup dry white wine
1 teaspoon grainy or Dijon mustard
3/4 cup heavy cream
1 1/4 teaspoons salt
2 tablespoons chopped fresh parsley
3/4 pound ziti

Heat the oven to 400F. Lightly oil a small roasting pan. Put the salmon
in the pan, skin side down. Spread the honey over the salmon and then
sprinkle with 1/4 teaspoon of the pepper. Roast the salmon until just
barely done, about 12 minutes, depending upon the thickness of the
fillet. Remove from the oven.

In a medium saucepan, heat the oil over moderately low heat. Add the
onion and cook, stirring occasionally, until translucent, about 5
minutes. Add the wine and simmer until about 1 tablespoon remains, about
2 minutes. Whisk in the mustard, cream, salt, and the remaining 1/4
teaspoon pepper. Turn off the heat. Flake the salmon and stir it and the
parsley into the sauce.

In a large pot of boiling, salted water, cook the ziti until just done,
about 13 minutes. Drain the pasta and toss with the sauce. Yield: 4
servings.

Simply Tim Classic: THE CORNFIELD MAN

When I was a kid, a typical Lee family vacation pointed our ’56 two-tone
Buick in the direction of Freelandville, Indiana, a main street hometown
by any other name. Many times the trips to see the grandparents took
days and days of tortuous travel -- tortuous at least, to sister Pat and
me, bored out of our minds in a cramped and hot back seat shared with a
red metal Coca-Cola cooler filled with crushed ice and baloney
sandwiches.

Eventually, as Indiana grew close, the sides of the road turned into
miles and miles of unbroken cornfields whose perpendicular furrows
converged individually at a point on the horizon like dwindling railroad
tracks. The mesmerizing effect as the Buick swept past the perfect rows
was that of a very tall man running on stilts, always a half-step ahead
of our speeding vehicle.

Year after year, the long-legged cornfield man lulled me to sleep
without once whispering his destination.

Fabric softener is made from a petroleum product. While it might make
towels softer, it also makes them somewhat water repellent. I never put
dryer sheets or use fabric softener with towels, wash clothes or dish
towels - especially not dish towels. I do use the knobby hard rubber
balls in the dryer with large bath towels. They work fine to keep the
towels to keep the bath towels from being scratchy.

I tried the baseball-sized ball of aluminum foil that someone mentioned
last week and it, surprisingly, worked pretty well. The clothes came out
of the dryer as soft as if I had used the softener spritz I mentioned
myself and there was no static cling. You won't get fluffy towels and
such, but they'll be soft and not scratchy.

By the way, what I did was squash a bunch of Reynold's Wrap into a ball
the size of a baseball. I tossed it into the dryer with a load of wet
clothes. After that first use, the ball of foil had compacted, so I
added more to it for the next load. It makes a bit of a clunking sound
but didn't seem to damage the dryer. We're going to stop buying
softener.
