Cheddar Soup

2 celery stalks, cut into 1/2-inch dice
2 medium carrots, peeled and cut into 1/2-inch dice
1 Granny Smith apple, peeled, cored, and cut into 1/2-inch dice
1 tablespoon vegetable or olive oil
5 cups chicken broth
1 medium baking potato, peeled and cut into 1-inch cubes
1/2 pound Cheddar, preferably white, grated (2 cups)
1 teaspoon Worcestershire sauce

In a large saucepan, cook the celery, carrots, and apple in the oil over
medium heat until softened, 7 to 8 minutes. Add the chicken broth and
potatoes; cover. Heat to boiling. Reduce heat to low, cover, and cook
until the potatoes are tender, about 15 minutes.

Puree the soup in a blender or food processor. Return to saucepan and
whisk in the Cheddar and Worcestershire. Season to taste with salt.
Serve with croutons or crusty bread. Yield: 4-6 servings.

Food For Thought

We’re interested in knowing what you read, think about, watch, and

This, also is for Vicky, who's considering returning to college. I, too,
say GO FOR IT! I returned to college to pursue my BSN @the ripe "young"
age of 42, and went to school part-time, while still working full-time,
and rearing a daughter who was in high school. It took me 4 years, and
the last year I had to go to weekend option (worked 8, 10, & 12 hr
shifts on weekend and Fridays) and attended classes and did the required
working options for practicum. It was tough, but fun!! I did discover
that I never wanted to work full-time weekends again, though! I
graduated Suma Cum Laude and graduated in the December class that year.
None of the students were ever rude and, once they figured out that I
was there to learn, we all helped each other. I have never regretted
going back for my BSN, as it helped me acquire a new job and opened some
doors for me that wouldn't have been opened without the degree. I had
worked as an RN most of my adult life, but going back to school when it
was what I wanted made a world of difference! When you graduate HS then
go straight into college, you're not really going for yourself, but for
what's expected of you. But when you attend later, it's because you want
to do it. I so thoroughly enjoyed art appreciation, paleontology,
history, and psychology courses of several different types. Oh, I JUST
ENJOYED BEING A PART OF COLLEGE!!!

I totally agree with Joni on The Perfect Storm by Sebastian Junger. I’d
seen the movie and was glad to find the book at the library. A
remarkable book and all the better for the background and information in
it. I love the ocean, and have been at sea in a 60-foot boat during a
horrendous storm. It is an experience I won’t forget. Joni, that is a
terrific review of the book and I second your recommendation.

Are you ready to read something really different? Author Robert
Ferrigno has written a trilogy which posits a world in which America,
wracked by years of economic devastation, moral decay, and never-ending
conflicts, has undergone a civil war, splitting into two very difference
sections: one a conservative Christian nation based in the former
American South ("The Bible Belt"), the other a moderate Islamic
Republic, centered in the city of Seattle. Add to this the issue of the
Islamic Republic and the Bible Belt both threatened with attack from the
expansionist Aztlán Empire (formerly Mexico and Latin America).

The three books are Sins of the Assassin, Prayers for the Assassin and
Heart of the Assassin. Rakkim Epps is a covert operative and hero of
the series. I highly recommend the series to those who enjoy
fantasy-type fiction.

Last month I finished reading for the second time all 13 novels of The
Sword of Truth series by Terry Goodkind. An adventure a la Lord of The
Rings, it will be a classic.

And to the person who wonders if she's too old to go to school....NO
YOU'RE NOT !!! You'll really enjoy yourself. I obtained an
undergraduate and then a graduate degree after the age of 40. My wife
obtained her undergraduate degree when she was 41. Go for it. You
won't regret it.
