Snow Pea and Pork Fried Rice

2 (4-ounce) boned center-cut loin pork chops
1 tablespoon low-sodium soy sauce
1 tablespoon dry sherry
2 large egg whites
1 large egg
Cooking spray
2 teaspoons dark sesame oil, divided
2 cups vertically sliced onion
2 cups snow peas
2 cups sliced mushrooms
1 tablespoon minced peeled fresh ginger
2 garlic cloves, minced
4 cups cooked long-grain rice, chilled
1/4 teaspoon salt
1/3 cup chopped green onions

Trim fat from pork chops; cut pork into 2- x 1/4-inch strips. Combine
pork, soy sauce, and sherry; cover and marinate in refrigerator 30
minutes. Drain; discard sherry mixture.

Combine egg whites and egg in a medium bowl; stir well with a whisk.
Place a large nonstick skillet or wok coated with cooking spray over
medium-high heat until hot. Add egg mixture; cook 2 minutes or until egg
is done. Remove egg mixture from skillet.

Add 1/2 teaspoon oil to skillet. Add pork; stir-fry 2 minutes or until
done. Remove pork from skillet; keep warm. Add 1/2 teaspoon oil to
skillet. Add sliced onion and snow peas; stir-fry 2 minutes. Add
mushrooms, ginger, and garlic; stir-fry 1 minute. Remove onion mixture
from skillet, and keep warm.

Add 1 teaspoon oil to skillet; add rice, and cook 1 minute without
stirring. Stir in egg mixture, pork, onion mixture, and salt, and
stir-fry 1 minute or until thoroughly heated. Sprinkle each serving with
about 1 tablespoon green onions. Yield: 5 servings.

Rich's Note:   All Things In Moderation

We have a fairly moderate climate here in southeast Virginia. The Gulf
Stream and our location on the coast usually keep the frigid
temperatures and snow at bay.

Some people like snow. I don't hold that against them, though I
sometimes wonder at their sanity. Molly called this morning to say that
it was snowing in Minneapolis. All I can say is that I'm glad I don't
live there. I agree, snow can be pretty, and it would be nice to dial up
a snowfall on Christmas Eve; but I don't like the cold, I don't
participate in or care for winter sports, and I dislike having to deal
with it.

We have a winter here. It gets cold and sometimes nasty. It may even
snow a bit every few years. We have even had blizzards as I recall. But
what seems like a long winter here is usually not more than eight weeks
or so, then we have a slide into spring with a couple of bumps in the
path. I like it that way.

So, Molly, if you're reading this, enjoy your snow. We still have roses
blooming, I saw a couple of gardenia blossoms the other day, and maybe
we'll think about bringing the houseplants in soon. I don't know. It
depends on the weather.

It’s time to go to this site and watch videos on Science, they are
strangely addicting – you might find yourself lost on this site for
hours like I was!

Simply Tim: PRETTY, PRETTY SARAH

I pulled open the lid of the large trashcan at the top of my hill and
there she was. Sleek. Black. Shiny. Much larger than I had ever
imagined. She was hanging upside-down, two blood-red triangles forming a
definitive hourglass, perfect in every aspect. She clung elegantly to a
disarrayed web; longish legs, like delicate stilettos, arranged just so.
Startled by the light, she scurried with dignity to a safer position on
the trashcan rim. Her brilliance was dazzling.

I lowered the lid and placed my garbage bag in a neighbor’s trash can.
But I couldn’t stand it. I cracked my own lid open again and peeked in.
Sarah. Yes. She looked like a Sarah. Pretty, pretty Sarah glared at me
through all eight of her eyes. Such a deep, deep black. Lovely, lovely
Sarah. I’m so sorry. Goodbye, Sarah.
