Roasted Garlic Potato Soup
5 whole garlic heads
2 bacon slices, diced
1 cup diced onion
1 cup diced carrot
2 garlic cloves, minced
6 cups diced baking potato (about 2 pounds)
4 cups low-salt chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
1 cup 2% low-fat milk
1/4 cup chopped fresh parsley
Remove white papery skin from each garlic head (do not peel or separate
cloves). Wrap each head separately in aluminum foil. Bake at 350F for 1
hour; let cool for 10 minutes. Separate cloves, and squeeze to extract
1/4 cup of garlic pulp; discard the skins.
Cook bacon in a large saucepan over medium-high heat until crisp. Add
onion, carrot, and minced garlic, and sauté 5 minutes. Add potato,
broth, salt, pepper, and bay leaf; bring to a boil. Cover, reduce heat,
and simmer 20 minutes or until potato is tender; remove bay leaf.
Combine garlic pulp and 2 cups potato mixture in a blender or food
processor, and process until smooth. Return purée to pan; stir in milk,
and cook over low heat until thoroughly heated. Remove from heat, and
stir in chopped parsley. Yield: 7 servings.

Vicki go for the college. When I decided to go back to school my
father-in-law said "You will be 48 when you get done in 2 years". I
replied I will be 48 in 2 years if I don't go to college. The point is
live life doing what you want to do. There is tremendous satisfaction in
going back for yourself, not because it is expected.

To anyone thinking of school in later life - I am 49 and working on my
dissertation! I started 5 years ago and it I have several months of work
still ahead of me. I have worked very hard and am a much better Student
then I ever was younger! I chose Capella University online -fully
accredited out of Minnesota and have loved not having to drive to
classes everyday. I have a son with special needs and a teen-age
daughter and the online coursework has been ideal. I have attended 3
out-of-town colloquials - a week of school with several hundred other
Capella students and found most everyone was over 40! Some were in their
60's and 70's. The economy may come and go but education is something no
one can take away from you once you have earned it. GO FOR IT!

I kind of like Clive Cussler novels even though he's not a great writer.
His plotting and characters have always been first class, but his
pacing, dialogue, and template style of writing leave a lot to be
desired.
Another writer, who has co-authored some novels with Mr. Cussler, is
Jack Du Brul. If you like heroic thrillers, you will thoroughly enjoy Du
Brul. Deep Fire Rising, is a page-turner that keeps you on the edge of
your seat. Du Brul can write rings around Cussler and shows it in this
novel.
Let me qualify the above. Some people love Cussler, expecting and
receiving the same story, book after book, happy to look forward to
whatever old automobile is mentioned, and I can appreciate that. Du
Brul, unlike many other thriller writers featuring the same lead
character, is not as formulaic and has better writing skills.
