Cumin Chicken with Black Beans

2 boneless, skinless chicken breast halves
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 tablespoons olive oil
1/2 cup chopped red onion
1 jalapeño pepper, seeded and minced
3 cups canned black beans, rinsed and drained
1 1/2 cups frozen corn kernels, thawed
1 1/4 cups cherry tomato halves
2 scallions, thinly sliced
2 tablespoons coarsely chopped cilantro
2 teaspoons red wine vinegar

Place chicken between 2 sheets of plastic wrap; pound with a mallet to
1/2-inch thickness. Combine cumin with cayenne pepper and rub over
chicken. Heat oil in a large skillet over medium heat. Sauté chicken for
4 minutes per side. Remove to a cutting board. Return the skillet with
pan drippings to medium heat. Add the onion and jalapeño and cook,
stirring, 1 minute. Add the beans, corn, tomatoes, and 3 tablespoons
water and cook, stirring, 1 or 2 minutes, until ingredients are just
heated through. Remove from heat and toss with the scallions, cilantro,
and vinegar. Season to taste with salt and freshly ground pepper. Slice
chicken and arrange on top of beans. Yield: Serves 4.

Rich's Note:   The Who?

Last year Richmond, Virginia lost their AAA minor league baseball team,
the Richmond Braves. From what I understand, the Braves had for years
been requesting a new ball park to replace the dilapidated one they had
been using. Richmond, or Richmond's leaders, stalled and stalled and
finally did nothing. The Braves played out their contract and moved to
Georgia, leaving Richmond without a baseball team this past season.

But the Giants needed a home for their AA team. AA is not quite as good
as AAA, but the baseball fans in Richmond were undoubtedly grateful I
should think.

Then came the hunt for a team nickname. They had been the Connecticut
Defenders featuring a stylized submarine as their logo. The new Richmond
owner decided they wanted a new team nickname and had a contest to
select the new name. I wasn't aware of Richmond getting a AA team until
last week when there was a brief article in Norfolk's newspaper's sports
section announcing that Hambones had been dropped as a potential name
for the Richmond name. The name was suggested as a tie-in with Virginia
ham. The local NAACP chapter pointed out that the name could be
considered offensive because of a dance brought to America by slaves. I
did not know that, but I agree with the decision to drop that name. I'm
one of those guys who think the Washington Redskins should either change
their name or change their logo to a peanut.

The other finalist nickname choices for the new Richmond baseball team
were Flatheads, Flying Squirrels, Rock Hoppers, Rhinos, and Hush
Puppies. I'm sure the owners and staff of the new ball club lost much
sleep trying to decide which of those gems would be a perfect fit. I
know I didn't.

The suspense was over soon, though. The Richmond Flying Squirrels are
waiting for spring when they can spread their. . .er. . .

I kind of liked Rock Hoppers.

Simply Tim: PRISONER FROM THE PAST

Sometimes old things remain fresh and good, like “The Prisoner” series
I’ve be re-watching on the International Film Channel (IFC). For those
of you too young (or too old!) to remember, this Winkipedia synopsis
pretty much says it all:

“The Prisoner is a 17-episode British television series broadcast in the
UK from 29 September 1967 to 1 February 1968. Starring and co-created by
Patrick McGoohan, it combined spy fiction with elements of science
fiction, allegory, and psychological drama.”

I liked The Prisoner back in the late Sixties, and I like it now even
better. Patrick McGoohan plays a British spy who resigns from an
apparently high-ranking and sensitive position only to be kidnapped by
unknown enemies (or quite possibly friends) and held prisoner on a far
away island with other apparently high-ranking and sensitive position
kidnapped people, all of whose names have been stripped from them and
replaced by numbers.

To say the least, as prisoner number “6”, Patrick McGoohan does not take
kindly to having been kidnapped and imprisoned even though the
closed-community prison is a rather lush and tropical island complete
with fancy accommodations, tennis courts, restaurants, swimming pools,
and a terrible bouncing white rubber balloon, released underwater, that
serves as the ultimate security device by engulfing offending residents
in a dangerous latex cocoon if they misbehave or try to escape.

I still love it. According to Winkipedia, the series is supposed to be
re-invented soon on American TV.
