Dirty Rice with Shrimp

2 tablespoons cooking oil
1/2 pound ground pork
1 onion, chopped
2 ribs celery, diced
1 green bell pepper, diced
1 clove garlic, minced
1/4 teaspoon cayenne
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1 bay leaf
1 3/4 teaspoons salt
1/4 teaspoon fresh-ground black pepper
1 1/2 cups long-grain rice
3 cups canned low-sodium chicken broth or homemade stock
1 pound medium shrimp, shelled and halved
2 scallions including green tops, chopped

1. In a large saucepan, heat 1 tablespoon of the oil over moderate heat.
Add the pork and cook until the meat is no longer pink, about 2 minutes.

2. Reduce the heat to moderately low and add the remaining tablespoon
oil to the pan. Add the onion, celery, bell pepper, and garlic. Cover
and cook, stirring occasionally, until the vegetables start to soften,
about 5 minutes. Stir in the cayenne, paprika, oregano, bay leaf, salt,
black pepper, and rice. Cook for 1 minute, stirring. Add the broth.
Bring to a boil, reduce the heat, and simmer, covered, for 15 minutes.

3. Raise the heat to moderate and stir in the shrimp. Cover and cook for
2 minutes. Remove the pan from the heat and let stand, covered, until
the rice and shrimp are just done, about 5 minutes longer. Remove the
bay leaf. Stir in the scallions. Yield: 4 servings.

Rich's Note:

I went to an Italian wedding this weekend. When I had an opportunity, I
spoke with the father of the bride.

"I would like a favor, Godfather," I said.

"What is this favor you ask? If it is in my power I will help you."

I lowered my voice almost to a whisper and told him what I wanted.

"What?" he asked. "I can't hear you. The cotton in my cheeks. . .it
absorbs sound."

"I want you to kill off Dick Tracy," I repeated.

"Dick Tracy? What has Dick Tracy ever done to you? No, no, don't tell
me. You were Mr. Ugly and Dick Tracy nabbed you for scaring a kid with
you face, right?"

"No," I said. "The way I figure it, Dick Tracy and his wristwatch
two-way radio made it desirable to have portable phones, which led to
cell phones, and cell phones led to Bluetooth, which makes everyone look
like Star Trek rejects, walking around, not paying any attention to
anything or, worse, driving and not paying attention to anything.
Sometimes I think these people are only pretending to talk to someone so
they can look 'cool.'"

"My friend, my friend. . .what was your name? Dick Tracy is just a comic
strip character. I can't whack a cartoon." He shook his head sadly.
"Besides, if I were able to off Dick Tracy, it would be like offing
Fearless Fosdick, and I would never do that. I'm sorry. This I cannot
do."

I hung my head and wept. At that point my cell phone went off. My eyes
went wide.

The godfather's eyes went wide too. "Get-out-a-here," he rasped.

Do You Remember?

Speak Softly Love (love Theme From Godfather)
Al Martino

Speak softly love
And hold me warm against your heart
I feel your words
The tender trembling moments start

We're in our world
Our very own
Sharing a love that only
Few have ever known

Wine colored days, warmed by the sun
Deep velvet nights, when we are one

Speak softly love
So no one hears us but the sky
The vows of love we make
Will live until we die

My life is yours
And all because
You came into my world with
Love so softly love

[Musical interlude]

Speak softly love
So no one hears us but the sky
The vows of love we make
Will live until we die

My life is yours
And all because
You came into my world with
Love so softly love
