Seven Layer Tortilla Pie

1 tablespoon olive oil
1 cup chopped red bell pepper
3/4 cup chopped green bell pepper
1/2 cup chopped red onion
1 (4.5-ounce) can chopped green chiles, drained
2 tablespoons minced fresh cilantro
1 teaspoon dried oregano
1 teaspoon chili powder
1/2 teaspoon ground cumin
2 cups no-salt-added tomato juice
2 (15-ounce) cans black beans, drained
2 (15-ounce) cans cannellini beans or other white beans, drained
1 cup (4 ounces) shredded reduced-fat Monterey Jack cheese
1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese
Vegetable cooking spray
7 (8-inch) flour tortillas
Cilantro sprigs (optional)

Heat oil in a large nonstick skillet over medium heat. Add red bell
pepper and next 7 ingredients (red bell pepper through cumin); saute 5
minutes or until tender. Add tomato juice; cook 8 minutes or until
reduced to 2 1/2 cups.

Combine black beans and half of tomato juice mixture in a bowl; stir
well. Stir cannellini beans into remaining tomato juice mixture. Set
both aside.

Preheat oven to 325F. Combine cheeses in a bowl; toss well. Line a
9-inch pie plate with foil, allowing 6 inches of foil to extend over
opposite edges of pie plate. Repeat procedure with another sheet of
foil, extending foil over remaining edges of pie plate. Coat foil with
cooking spray, and place 1 tortilla in bottom of dish. Spread 1 cup
cannellini bean mixture over tortilla; sprinkle with 1/4 cup cheeses.
Place 1 tortilla over cheeses, pressing gently. Spread 1 cup black bean
mixture over tortilla; sprinkle with 1/4 cup cheeses. Place 1 tortilla
over cheeses, pressing gently. Repeat layers, ending with the remaining
cannellini bean mixture and cheeses.

Bring edges of foil to center; fold to seal. Bake at 325F for 40
minutes. Remove from oven; let stand, covered, 10 minutes. Remove foil
packet from dish; unwrap pie, and slide onto serving plate using
spatula. Cut into wedges; garnish with cilantro, if desired. Yield: 8
servings.

Recently I read, Murder at the Academy Awards, by Joan Rivers and
Jerrilyn Farmer. I even laughed during what turns out to be the murder.
The point of view is hilarious. and the mystery is a well written
story. It will remind you somewhat of a Stephanie Plum novel, but, on
its own, a good read.

Just finished "Mrs. Kimble" by Jennifer Haigh, her first novel.
Outstanding!
It's the story of Birdie, Joan, and Dinah who (in sequence) were
married to the same man, Ken Kimble, the rat! He is charming and totally
out for himself. His weakness is younger women. The last Mrs. Kimble,
Dinah, had been the babysitter for the children in his first marriage.
He's plenty old enough to be her father. Part of the story is how KK's
deserted his first wife by running off with one of his college students,
never looking back, and the effect of this abandonment on his son,
Charlie. Ken Kimble is a smooth operator and senses what women want. He
then becomes that, at least long enough to get what he wants, whether it
be an affair or marriage. He is canny enough to position himself to
inherit lots of money and then engages in --- wait! I don't want to
spoil it for you.
If this is Jennifer Haigh's first novel, I will run back to the library
for #2.

In September one of the readers wrote to recommend a book by Jodi Thomas
called, "Twisted Creek." In the review she wrote, she quoted the first
sentence of the book and I was hooked! I was just home from the
hospital after having a stroke, but I went on line and ordered the book
from Amazon. I had a wonderful experience with this. The book came
from Amazon within a week and I read it while convalescing, going so far
as to read portions of it out loud. Then Amazon sent me a form asking
me to review the book, and I used the same technique that was used here
in Food for Thought -- I quoted the first sentence of the book and went
on from there. I've never done a book review before, but my friend who
is an author read it and says it's good. I will be ordering more books
by Jodi Thomas and I recommend them to those who read. For those who
are interested, my review is signed, "Peg of the red pencil."

I am currently reading a novel entitled 'Under This Unbroken Sky', by
Shandi Mitchell. My wife just finished it and two book clubs to which
we belong have just picked it up. It is a recently released novel
regarding one year in the life of an immigrant family in northern
Alberta, Canada. It is way out of my genre (normally horror & SF), but
it is captivating - you feel what the characters feel and almost live
along with them! Try it!
