Roasted Pineapple Carrot Salsa

1 medium ripe pineapple
1 teaspoon dark sesame oil
1/8 teaspoon ground red pepper
1 (1-inch-thick) slice sweet onion
1 large jalapeno pepper, sliced lengthwise and seeded
2 tablespoons diced red bell pepper
1/2 cup chopped carrot
2 tablespoons fresh lime juice
2 tablespoons pineapple juice
1 tablespoon cider vinegar
1 teaspoon brown sugar
1 teaspoon grated peeled fresh ginger
1/8 teaspoon ground allspice

Preheat oven to 450F.

Cut both ends off of pineapple using a large sharp knife, and cut
pineapple pulp from rind. Cut pineapple pulp lengthwise into quarters.
Remove core from quarters; discard core. Reserve 2 quarters for another
use.

Combine sesame oil and ground red pepper, and brush over 2 pineapple
quarters, onion slice, and sliced jalapeno pepper. Place pineapple on a
baking sheet, and bake at 450° for 15 minutes. Add onion, and bake an
additional 10 minutes. Add sliced jalapeno pepper, and bake an
additional 10 minutes or until pineapple, onion, and jalapeno are
lightly browned. Remove from oven, and cool. Dice pineapple, onion, and
jalapeno, and combine with diced bell pepper in a medium bowl.

Cook carrot in boiling water 4 minutes or until crisp-tender.

Combine carrot, lime juice, and remaining ingredients. Add to pineapple
mixture; stir well. Yield: 2 1/2 cups.

Serve with pork or ham.

Rich's Note:   John Adams

When HBO featured their John Adams mini-series a while back, I missed it
because I don't subscribe to HBO. Well, two weeks ago my friend John
lent me the DVD boxed set of the series and Susan and I watched. It was
great. Not that it was without problems, but there was so much to like
about.

The acting was superb, even though some of the actors were horribly
miscast. David Morse was perfect as George Washington. The production
qualities, too, were superb, even if inconsistent. The make-up and
costumes were phenomenal. The photography was great. In other words we
really, really liked it. We watched all seven parts in three evenings.

One thing, though, that bothered me is that the main theme music was
very, very similar to the main theme from the film The Last Of The
Mohicans.

Simply Tim: COTTON SANDWICH

I don’t recall when exactly it happened, but one night before going to
bed many years ago, I decided I had outgrown the feel of cotton top
sheets on my bed. Just to be sure, I tried some fancy flannel sheets as
well as some expensive “Egyptian” many-threads-per-inch varieties, but I
didn’t like them, either. It was then I began using loosely woven cotton
blankets, instead. The soft blankets served as both top sheet and
bedspread, easy to straighten in the morning and easy to clean on a
weekly schedule in my washing machine. (I rotate the blankets from top
to bottom, the bottom blanket being the one I remove each week when I
wash.)

When the weather gets colder as it’s doing right now (I like to keep my
house cool in the winter), all I have to do is throw on another blanket
or two; they are light enough that weight isn’t a problem. The blankets
are inexpensive and go on sale often in various stores, like JC Penney:
they are quite comfortable, easy to live with, and come in several
bachelor-approved colors. I love them.

It was only a matter of time before I decided I didn’t like the feel of
fitted regular bottom sheets, either, so I bought some over-sized king
cotton blankets when they went on sale and now tuck them around the
mattress underneath me, wrapped like a slab of deli ham in this soft,
cotton blanket sandwich.

Being a bachelor has its benefits.
