Cream of Reuben Soup

6 cups chicken broth
3/4 pound cooked corned beef, chopped
1 (10-ounce) can chopped sauerkraut, drained
1 large carrot, grated
1/2 cup chopped onion
1 garlic clove, minced
1/2 teaspoon dried thyme
1/4 teaspoon ground white pepper
1/4 teaspoon dried tarragon
1 bay leaf
3 tablespoons cornstarch
1/3 cup water
2 cups (8 ounces) shredded Swiss cheese
1 cup whipping cream
Rye bread cubes, toasted

Combine first 10 ingredients in a Dutch oven; bring to a boil over
medium heat. Reduce heat, and simmer 30 minutes. Remove and discard bay
leaf.

Combine cornstarch and water, stirring until smooth; stir mixture into
soup. Bring to a boil; boil, stirring constantly, 1 minute. Remove from
heat.

Add shredded cheese and whipping cream, stirring until cheese melts. Top
each serving with toasted rye bread cubes. Yield: Makes 12 cups.

This is an open letter to all the readers/users, especially the
non-contributors, of RDJ:

C'mon, you know it's good; heck, you know it's great! It's down-home
folksy and comfortable. The recipes and features of RDJ are awesome.
Where else can you benefit from contributions from people all over the
country? The benefits (let me count the ways):


 
 Recipes you've never seen before, an opportunity to be adventurous
in your own kitchen.
 
 Usually a tip is tried and true.
Usually a recipe from Friday's Good Neighbor Recipes is
family-tested.
 
 Off the Shelf gives personal reviews so you can save money by
skipping the baddies and latching onto the good stuff.
 
 Food for Thought also helps with choosing reading material. You can
tell ahead of time instead of judging the book by the cover.
 
 The computer sites are usually quite awesome. How much times does
that save? Someone else surfs for you!
 
 Song lyrics --- they sure bring back memories. And some of them
clarify what those words were exactly. Who knew that Louie, Louie
"smelled the rose in her hair"?
 
 The essays are fun to read. I've skipped a feature or two, or more,
but you gotta agree, it's all good stuff

Just think about how much you have saved in both dollars and time by
reading the du Jours. Any contribution is a fraction of what you've
saved. I am a fan. You are a fan, too.

For those of you who truly enjoy creating and eating desserts, there's
Dessert du Jour.

I say, let's show these guys how much we appreciate their hobby. We've

circle. (I thought the pink noise was more fluid. It reminds me of

Simply Tim: THOSE AMAZING FXS

Special effects in movie and television have become a special item of
amazement for me, one that is truly limited only by the imagination of
those who envision it and render the outcome. And with the continued
advances in digital technology, I find the so-called “willingness to
suspend disbelief” has become a thing of the past: except for dubious or
broken plots, there is nothing at all visually left for me to
disbelieve.

Wouldn’t it be great to be able to go back in time, shove a youngster
watching a 50’s Jet Jackson television show into some kind of time warp,
plop them down in a modern day theatre and immerse them in the most
recent “X-Men Origins: Wolverine” movie? About the only thing they could
relate to (if they could afford it!) would be the popcorn. Most likely,
children of that era would be both dazzled by the grandeur and terrified
by the violence, afraid for weeks to go to sleep.

It’s fun trying to imagine what the future may bring, what mysteries
will be solved, what greater mysteries will be discovered or pondered. I
have no doubt technology will continue to amaze us; that one day soon
someone will wonder about stepping back in time, yanking a 2000’s
audience away from watching “X-Men Origins: Wolverine” on their iPod,
and plopping them down in some virtual reality environment where the
only familiar element will possibly be the scent of popcorn, if they can
afford it.
