Crustless Smoked Salmon Quiche with Dill
1 1/4 cups fat-free evaporated milk
1/4 cup fat-free sour cream
1 teaspoon Dijon mustard
4 large egg whites
1 large egg
1/2 cup (2 ounces) shredded Gouda cheese
1/2 cup thinly sliced green onions
1/4 cup thinly sliced smoked salmon, chopped (about 2 ounces)
2 tablespoons chopped fresh dill
1/2 teaspoon black pepper
Preheat oven to 350F.
Combine first 5 ingredients in a large bowl, stirring with a whisk. Stir
in cheese, onions, salmon, dill, and pepper. Pour egg mixture into a
9-inch pie plate coated with cooking spray. Bake at 350F for 35 minutes.
Let stand 15 minutes. Makes 8 servings.

Monounsaturated fat: 1g
Polyunsaturated fat: 0.2g

Just finished reading The Last Lecture by Randy Pausch & Jeffrey Zaslow.
Many of you may already know the story of Randy who was a professor at
Carnegie Mellon in Pittsburgh and was dying from Pancreatic cancer. I
was afraid that this book might be depressing but the kindle version was
on sale at Amazon so I decided to chance it. If you’re looking for an
uplifting, joyous and yes, even funny book, this will exceed your
expectations. I was amazed that I found myself laughing while reading
certain parts. This is, by far, one of the best books I have read in a
long time. If more of us could live our lives like Randy, what a
wonderful world this would be.
