MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: North Carolina Smothered Quail
Categories: Wildgame, Quail, Birds
      Yield: 3 Servings

      6 ea Whole quail
      1 ea Stick butter
      4 tb Flour
    1/2 c Dry sherry
    3/4 ts Chopped parsley
    1/2 ts Chervil (optional)
        x Salt and pepper to taste
        x Chicken stock

Brown quail in melted butter. Remove to a casserole. Slowly stir
flour into butter in skillet. Combine chicken stock, sherry and
herbs and add to flour mixture. Pour over quail. Salt and pepper to
taste. Cover casserole and bake at 350 degrees for an hour.
