      Title: West Virginia Roast Goose With Apple Stuffing

      Yield: 6 Servings

      1 ea Goose, all fat removed
      1 ts Salt
      1 ts Pepper
      3 c Apples, diced
    1/2 c Water
1 1/2 c Onions, chopped
      1 ts Celery seed
    3/4 c Butter, melted
    3/4 c Apple cider
      6 c Toasted bread crumbs
      4 ea Slices bacon

Soak goose in salt water 1/2 hour. Drain and wipe dry. Rub inside and
outside with salt and pepper. Prick breast, legs and wings with a fork.
Cook apples in 1/2 cup water. Cook onions and celery seed in butter for 3
minutes. Mix apples, onions, apple cider, celery seed, salt and pepper
with bread crumbs and stuff body and neck cavity. Place breast side up in
shallow roasting pan. Lay 4 slices of bacon on top of goose. Roast
uncovered at 325 degrees for 4 to 5 hours.
