1 ea Venison haunch or loin
x Vinegar
x Garlic powder
3 ea Onions cut into eighths
1 lb Bacon
x Garlic salt
1 c Red wine
----------------------------------OPTIONAL----------------------------------
Rice
Curried fruit
Green beans
Almonds
Cut 1-inch wide slits in venison all the way through, about 2 inches apart.
pour scant capful (off vinegar bottle) vinegar into each slit. Shake garlic
powder into each slit. Stuff slits with cut onion and strip of bacon to
the top. Shake garlic salt on top of roast. Lay strips of bacon across
top. Pour red wine on top. Roast in covered roaster 3-4 hours or until
very tender. Baste occasionally. Remove from roaster and make gravy from
drippings. Serve with rice, curried fruit, and green beans with almonds.
