Title: RABBIT AND DUMPLINGS

Yield: 4 Servings
2 ea Rabbits, cut up
Flour
6 tb Butter
1 1/2 qt Water
1 cn Tomatoes
1 lg Onion, diced
1 1/2 ts Salt
1/4 ts Pepper
3 c Flour
3/4 ts Salt
6 ts Baking powder
1 1/2 c Milk
Dredge the rabbit in flour and brown in butter. Add rabbit and butter to
large pot with water, tomatoes, onion, salt and pepper. Simmer until
tender. For dumplings, sift together: 3 cups flour, 3/4 teaspoon salt
and
6 teaspoons baking powder. Add milk, blending until well moistened. Drop
by spoonfuls into simmering rabbit stew. Cover and simmer gently 15
minutes
with lid on.
