Oat Fried Groundhog  Gary Phelps

Oat Fried Groundhog

6 lbs. groundhog, cut up
3/4 cup milk
3 eggs, whipped
4 cloves garlic, minced
1 cup raw oats
1 cup bread crumbs, finely crushed
1 cup flour
1 cup olive oil
1/2 teaspoon paprika
salt and pepper to taste

In a mixing bowl, combine milk, eggs, and garlic, mix well. Sprinkle
groundhog with flour. Combine oats, bread crumbs, paprika, salt, and
pepper, blend well, spread out on a cutting board.

Heat olive oil in a large fry pan. Dip groundhog in liquid mixture, roll

in oats to cover, place in hot olive oil, fry until golden brown. Heat
oven to 350 degrees. Drain fried pieces well, place in a baking pan.
Bake
for 30 minutes. Serve!

Serves 8

Mashed potatoes and gravy, fresh green beans, and hot rolls compliment
this dish well.
